Yesterday after the mandatory drying time, we collected the Trebbiano and Malvasia grapes which were drying on straw mats for the production of our Vin Santo Riserva Sant’Antimo 2015.
The bunches are put in crates and then pressed. They looked very healthy and tasted really sweet. In a couple of days the pressed juice will be put in our Caratelli barrels, to replace the Vin Santo Riserva 2005 that will be bottled soon.
