We have harvested the Trebbiano and Malvasia grapes for the Vin Santo. The especially good weather has kept the grapes healthy and ripe, and therefore particularly suitable for being dried on straw mats, which happens in our Vinsantaia (pictured below). The grapes have been harvested in crates in order to avoid being pressed by the weight of the other grapes and to keep the berries intact. This is very important since the whole grape bunches will lay down to dry.
As you can see in the photo above, the grapes destined for Vin Santo were placed on straw mats the same day that they were harvested and they will lay there for approximately three months.
