On Monday, we have begun the harvest of the Trebbiano and Malvasia grapes that we utilize for the production of the Vin Santo Sant'Antimo DOC.
The grapes are distributed on straw mats to dry so as to increase the sugar concentration.
The Vin Santo ages, then, for 5-8 years in casks called "caratelli" which are 100 liters in volume.
